Chip-shop fish is battered and deep-fried, but a seasoned panko crust in the air fryer gets a proper crunch with a spray of oil. The chips go first, then the fish, so everything is hot at once. The tartar sauce is yogurt, a little mayo, pickle and dill.

Ingredients

For 4 plates.

Chips

  • 2 lb russet potatoes, cut into 1/2-inch wedges
  • 1 tablespoon canola oil

Fish

  • 1 1/2 lb skinless cod fillets, cut into 8 pieces
  • 1/4 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 teaspoon garlic powder
  • cooking spray

Peas and tartar sauce

  • 2 cups frozen peas
  • 1/2 cup plain nonfat Greek yogurt
  • 2 tablespoons light mayonnaise
  • 2 tablespoons chopped dill pickle
  • 1 tablespoon chopped fresh dill
  • 1 lemon, cut into wedges

Method

  1. Toss the potatoes with the oil and air fry at 400°F for 18 to 20 minutes, shaking twice, until crisp and golden.

  2. Meanwhile, pat the fish dry. Set out the flour, the beaten eggs and the panko mixed with garlic powder. Coat the fish in each and spray with oil. Stir the tartar sauce together.

Tips

  • Soak the cut potatoes in cold water for 10 minutes and dry them well for crisper chips.
  • Spread the wedges in a single layer; piled-up chips steam instead of crisping.
