Al Pastor Pork Tacos
Chili-marinated pork, seared pineapple, onion, cilantro.
Al pastor is spit-roasted pork marinated in chilies and pineapple. At home, thin slices of pork tenderloin take the marinade in fifteen minutes and char beautifully in a hot skillet. Seared pineapple chunks add the sweet, smoky edge.
Ingredients
For 4 plates.
Pork
- 1 3/4 lb pork tenderloin, sliced 1/4 inch thick
- 2 tablespoons chili powder
- 1 chipotle pepper in adobo, minced
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 cup pineapple juice
- 2 tablespoons apple cider vinegar
- 3 cloves garlic, grated
- 1/2 teaspoon kosher salt
- 1 tablespoon canola oil
Tacos
- 1 cup diced fresh pineapple
- 12 corn tortillas
- 1/2 white onion, finely diced
- 1/2 cup chopped fresh cilantro
- 1 lime, cut into wedges
Method
Stir the chili powder, chipotle pepper, cumin, oregano, pineapple juice, vinegar, garlic and salt together. Toss with the sliced pork and marinate 15 minutes in the fridge.
Meanwhile, dice the pineapple and onion and chop the cilantro.

Tips
- Slice the pork thin and cook it in batches; crowded meat steams instead of charring.
- Leave the pineapple alone in the pan until it caramelises at the edges.
