Chopped Cheese Sandwiches
Griddled beef, onions and melted cheese on a hero.
The chopped cheese is a corner-store legend: beef and onions chopped together on the griddle, cheese melted right in, then scooped into a roll with lettuce, tomato and a squeeze of mayo and ketchup. Lean beef keeps it from getting greasy. It takes fifteen minutes from start to finish.
Ingredients
For 4 sandwiches.
Beef
- 1 3/4 lb 93% lean ground beef
- 1 yellow onion, finely chopped
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon ground black pepper
- 3 oz American cheese (4 slices)
To build
- 4 hero rolls (2 1/2 oz each)
- 2 cups shredded romaine
- 1 large tomato, sliced
- 2 tablespoons light mayonnaise
- 1 tablespoon ketchup
Method
Cook the beef and onion in a large skillet over medium-high heat for 6 to 7 minutes, chopping with a spatula, until browned and 160°F. Season with the garlic powder, onion powder and pepper.
Split the beef into 4 piles, lay the cheese over and cover for 30 seconds to melt.
Split and toast the rolls. Spread with mayo and ketchup and fill with lettuce, tomato and the cheesy beef.
Tips
- Use the edge of a metal spatula to chop the beef as it cooks; that's where the name comes from.
- Lay the cheese over the beef and cover the pan for 30 seconds to melt it fast.
