Homemade Sesame Bagels
Chewy, glossy-crusted sesame bagels and a skyr schmear.
Real bagels are boiled before baking, which gives them their chewy crust. This dough adds Greek yogurt and a scoop of whey to bread flour, so each bagel is more filling, and a thick skyr and chive schmear makes breakfast complete. They freeze perfectly.
Ingredients
For 6 bagels.
Dough
- 2 1/2 cups bread flour
- 2 scoops unflavored whey protein isolate (about 2/3 cup)
- 1 1/2 teaspoons active dry yeast
- 1 tablespoon honey
- 1 1/4 teaspoons kosher salt
- 1 cup plain nonfat Greek yogurt
- 1/2 cup warm water
To boil and top
- 1 tablespoon honey
- 1 large egg white, beaten
- 2 tablespoons white sesame seeds
Skyr schmear
- 2 1/4 cups plain skyr
- 3 tablespoons chopped fresh chives
Method
Mix the flour, whey, yeast, honey and salt, then the yogurt and warm water, and knead 8 to 10 minutes until smooth and firm.
Cover and leave in a warm spot for 1 hour until puffy.

Tips
- Knead until the dough is smooth and springs back; bagel dough is firmer than bread dough.
