Panang Chicken
Rich, nutty red curry with chicken thighs.
Panang is the thickest and sweetest of the Thai curries, with peanut in the paste and very little liquid. Light coconut milk keeps it rich without making it heavy, and a spoon of peanut butter brings back the roasted depth. Simmer it just until it coats a spoon.
Ingredients
For 4 bowls.
Curry
- 2 1/4 lb boneless skinless chicken thighs, cut into bite-size pieces
- 1 (13.5 oz) can light coconut milk
- 3 tablespoons panang curry paste
- 1 tablespoon creamy peanut butter
- 1 tablespoon fish sauce
- 1 tablespoon light brown sugar, packed
- 1 red bell pepper, sliced
- 1/2 cup Thai basil leaves
Rice
- 1 cup jasmine rice
- 1 1/2 cups water
Method
Rinse the rice, then bring it to a boil with the water in a small pot. Cover, turn the heat to low and cook 15 minutes. Leave it covered off the heat.
While the rice cooks, cut the chicken and slice the pepper.

Tips
- Fry the curry paste in a little coconut milk before adding the rest; it should smell toasty, not raw.
- Curry pastes vary in heat and salt, so start with less and taste.
