Szechuan Peppercorn Shrimp
Tingly, garlicky shrimp with edamame and rice.
Toasted Sichuan peppercorns give this its buzzing, citrusy heat, while dried chilies add warmth without much fire. Shrimp cook in two minutes, so everything else is ready before they hit the pan. Edamame adds sweetness and makes each bowl more filling.
Ingredients
For 3 bowls.
Shrimp
- 1 1/4 lb large shrimp, peeled and deveined
- 1 teaspoon cornstarch
- 1 tablespoon peanut oil
Aromatics
- 1 1/2 teaspoons Sichuan peppercorns
- 6 dried red chilies
- 4 cloves garlic, sliced
- 1 tablespoon minced fresh ginger
- 2 cups frozen shelled edamame, thawed
- 4 scallions, cut into 1-inch lengths
Sauce
- 1 tablespoon low-sodium soy sauce
- 1 tablespoon rice vinegar
- 2 teaspoons sugar
- 1 teaspoon cornstarch
- 3 tablespoons water
Rice
- 1 cup jasmine rice
- 1 1/2 cups water
Method
Rinse the rice, then bring it to a boil with the water in a small pot. Cover, turn the heat to low and cook 15 minutes. Leave it covered off the heat.
While the rice cooks, toast the Sichuan peppercorns in a dry skillet over medium heat for 1 minute until fragrant, then crush them coarsely.

Tips
- Pat the shrimp very dry so they sear instead of steaming.
- Toast the peppercorns in a dry pan before crushing; it doubles their aroma.
