Brown Butter Blondies
Nutty brown butter, chewy centre, chocolate chips.
Browning the butter is the one step that makes these blondies taste like toffee. Casein protein keeps the centre fudgy and chewy rather than cakey, and Greek yogurt keeps them moist. Cut them into eight bars; two make a generous serving.
Ingredients
For 4 portions.
- 3 tablespoons unsalted butter
- 1/3 cup packed light brown sugar
- 1 large egg
- 3/4 cup plain nonfat Greek yogurt
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 2/3 cup casein protein powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon kosher salt
- 1/4 cup semisweet chocolate chips
- cooking spray
Method
Heat the oven to 350°F and line an 8-by-8-inch pan with sprayed parchment. Cook the butter in a small pan over medium heat, swirling, for 4 to 5 minutes until nutty and brown. Pour into a bowl and cool 5 minutes.
Whisk in the brown sugar, then the egg, yogurt and vanilla. Fold in the flour, casein, baking powder and salt, then the chocolate chips. Spread in the pan.

Tips
- Brown the butter until it smells nutty and the bits at the bottom turn chestnut, then take it off the heat right away.
- Pull them when the centre still looks a little soft; they firm as they cool.
