Strawberry Toaster Pastries
Tender pastry, jammy strawberry-skyr filling, pink glaze.
Homemade toaster pastries taste like the boxed ones remembered, only better: a tender yogurt-butter crust, a filling of strawberry jam, fresh berries and thick skyr, and a pink glaze on top. A scoop of whey goes into the dough. They reheat beautifully in the toaster oven.
Ingredients
For 4 pastrys.
Pastry
- 1 1/4 cups all-purpose flour
- 1 scoop unflavored whey protein isolate (about 1/3 cup)
- 1/2 teaspoon baking powder
- 1/4 teaspoon kosher salt
- 3 tablespoons cold unsalted butter, cubed
- 1/2 cup plain nonfat Greek yogurt
- 1 large egg, beaten
Filling
- 1/2 cup plain skyr
- 3 tablespoons strawberry jam
- 1/2 cup diced fresh strawberries
Glaze
- 3 tablespoons powdered sugar
- 1 teaspoon strawberry jam
- 1 teaspoon 2% milk
Method
Heat the oven to 375°F. Whisk the flour, whey, baking powder and salt, rub in the butter until it looks like coarse crumbs, then stir in the yogurt to form a dough.
Roll the dough into a 12-by-10-inch rectangle and cut into 8 rectangles. Stir the skyr, jam and strawberries together and spoon onto 4 rectangles, leaving a border. Brush the edges with egg, top with the other rectangles and press with a fork. Brush the tops with egg.
