Chicken and Waffles
Crispy chicken tenders on fluffy waffles, maple and heat.
Chicken and waffles is the sweet-salty-spicy combination that brunch was made for. The waffle batter gets Greek yogurt and a scoop of whey for a tender, fluffy result, and the tenders take a buttermilk soak before a panko crust and the air fryer. Maple syrup with a dash of hot sauce goes over everything.
Ingredients
For 4 plates.
Chicken
- 1 1/2 lb chicken tenders
- 1/2 cup low-fat buttermilk
- 1 tablespoon hot sauce
- 1 cup panko breadcrumbs
- 1/2 teaspoon smoked paprika
- cooking spray
Waffles
- 1 cup all-purpose flour
- 1 scoop unflavored whey protein isolate (about 1/3 cup)
- 2 teaspoons baking powder
- 1/4 teaspoon kosher salt
- 2 large eggs
- 3/4 cup 2% milk
- 1/2 cup plain nonfat Greek yogurt
- 1 tablespoon unsalted butter, melted
- 1 tablespoon sugar
To serve
- 1/4 cup pure maple syrup
- 1 teaspoon hot sauce
Method
Toss the tenders with the buttermilk and hot sauce and refrigerate 10 minutes.
Meanwhile, whisk the flour, whey, baking powder, salt and sugar. In another bowl whisk the eggs, milk, yogurt and butter, then stir into the dry ingredients until just combined.

Tips
- Don't overmix the waffle batter; a few lumps make it tender.
- Unflavoured whey keeps the waffles savoury enough for chicken.
