Patty Melts
Griddled rye, caramelized onions, beef and Swiss.
A patty melt is a burger that became a grilled cheese. Onions cook down slowly until jammy and sweet while the patties sear, then everything is pressed between rye and griddled until the bread crackles. It's a diner counter in a skillet.
Ingredients
For 4 sandwiches.
Onions
- 2 yellow onions, thinly sliced
- 1 teaspoon olive oil
- 2 tablespoons water
Patties
- 1 3/4 lb 93% lean ground beef
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
To build
- 8 slices rye bread
- 4 slices Swiss cheese
- 1 tablespoon unsalted butter, softened
- 1 tablespoon Dijon mustard
Method
Cook the onions in the oil over medium heat, stirring now and then, for 15 minutes until soft and golden. Add the water halfway through. Move to a bowl.
Meanwhile, shape the beef into 4 oval patties and season with the salt and pepper.
