High-proteinMethod in Pro

Real pho broth takes hours, but charring the onion and ginger and toasting whole spices gets a weeknight version most of the way there. The chicken poaches right in the broth, so it seasons the soup as it cooks. Fresh herbs, lime and chilies at the table finish it.

Ingredients

For 4 bowls.

Broth

  • 1 yellow onion, halved
  • 1 oz fresh ginger (a 2-inch piece), halved lengthwise
  • 3 star anise
  • 1 cinnamon stick
  • 2 1/2 cups low-sodium chicken broth
  • 2 1/2 cups water
  • 2 teaspoons fish sauce
  • 1 teaspoon sugar

Chicken

  • 2 lb boneless skinless chicken breasts

Noodles

  • 6 oz dried rice noodles

To serve

  • 2 cups bean sprouts
  • 1/2 cup Thai basil leaves
  • 1/2 cup fresh cilantro leaves
  • 1 lime, cut into wedges
  • 1 jalapeño, thinly sliced

Method

  1. Char the onion and ginger, cut side down, in a dry pot over high heat for 4 to 5 minutes until blackened in spots. Add the star anise and cinnamon and toast 30 seconds.

  2. Add the broth, water, fish sauce, sugar and the whole chicken breasts. Bring to a boil, then simmer uncovered for 20 to 25 minutes until the chicken reaches 165°F.

Tips

  • Char the onion and ginger until properly blackened in spots; that's where the deep flavour comes from.
  • Taste the broth at the end and add fish sauce a few drops at a time.
