Grilled Pork Vermicelli Bowls
Caramelized lemongrass pork over noodles and herbs.
These bowls are all contrast: hot charred pork, cool rice noodles, crunchy vegetables and a bright, punchy dressing. Pork tenderloin sliced thin takes a quick marinade and chars in minutes under the broiler. The dressing does double duty as the sauce.
Ingredients
For 4 bowls.
Lemongrass pork
- 1 3/4 lb pork tenderloin, sliced 1/4 inch thick
- 2 stalks lemongrass, finely minced
- 3 cloves garlic, minced
- 1 shallot, minced
- 2 teaspoons fish sauce
- 1 tablespoon light brown sugar, packed
- 1 tablespoon canola oil
Noodles
- 6 oz rice vermicelli
Bowl
- 2 cups shredded romaine
- 1 English cucumber, sliced
- 2 carrots, cut into thin matchsticks
- 1 cup bean sprouts
- 1/4 cup chopped fresh mint
- 1/2 cup fresh cilantro leaves
- 1/4 cup chopped unsalted roasted peanuts
Dressing
- 1 1/2 tablespoons fish sauce
- 1/4 cup fresh lime juice
- 2 tablespoons sugar
- 1/2 cup warm water
- 1 clove garlic, minced
- 1 Thai chili, sliced
Method
Slice the pork and toss with the lemongrass, garlic, shallot, fish sauce, brown sugar and oil. Cover and refrigerate while you prep everything else, at least 10 minutes.
Boil the vermicelli for 3 to 4 minutes, drain and rinse under cold water until cool. Drain well.

Tips
- Line the pan with foil; the sugar in the marinade caramelises and sticks.
- Shake the dressing well before pouring; the sugar settles.
