Denver Omelet
Ham, peppers, onion and cheddar folded in fluffy eggs.
The Denver omelet is the diner breakfast that never goes out of style: ham, green pepper and onion cooked until sweet, folded into eggs with a little cheddar. Adding egg whites makes it bigger and fluffier. It's done in fifteen minutes.
Ingredients
For 2 omelets.
Filling
- 1 teaspoon unsalted butter
- 3 oz thinly sliced deli ham, diced
- 1/2 green bell pepper, diced
- 1/4 yellow onion, diced
Eggs
- 4 large eggs
- 3/4 cup liquid egg whites
- 1 oz reduced-fat cheddar, shredded
- cooking spray
Method
Cook the ham, pepper and onion in the butter in a nonstick skillet over medium heat for 4 minutes. Move to a plate.
Whisk the eggs and whites. Spray the pan, pour in half and cook over medium heat, lifting the edges, for 2 minutes until nearly set (160°F). Add half the filling and cheese, fold and slide onto a plate. Repeat.
The rest of the method is in Short Order Pro

Tips
- Cook the filling first and keep it warm, so the eggs only need 2 minutes.
- Tilt the pan and lift the edges so raw egg runs underneath.
