Steak and Egg Breakfast Hash
Crispy potatoes, seared steak, runny eggs.
A cast-iron hash is the best use of a little steak: seared cubes of sirloin, crisp potatoes and sweet peppers, with eggs cooked right in hollows on top. Microwaving the potatoes first cuts the time in half and makes them crisp up faster. Hot sauce on the side.
Ingredients
For 4 portions.
Potatoes
- 1 1/2 lb Yukon Gold potatoes, cut into 3/4-inch cubes
- 1 tablespoon canola oil
Steak and vegetables
- 1 lb sirloin steak, cut into 3/4-inch cubes
- 1 teaspoon smoked paprika
- 1 teaspoon kosher salt
- 1 red bell pepper, diced
- 1/2 yellow onion, diced
Eggs
- 4 large eggs
- 2 scallions, sliced
Method
Microwave the potatoes with 2 tablespoons water, covered, for 6 minutes until just tender. Drain.
Meanwhile, season the steak with the paprika and half the salt and sear it in a large skillet over high heat for 3 to 4 minutes until browned and 145°F. Move to a plate to rest while the potatoes crisp.

Tips
- Leave the potatoes alone in the pan so they form a crust before stirring.
- Cover the pan once the eggs are in so the whites set before the yolks harden.
