Cajun Chicken and Dirty Rice
Spice-crusted chicken over savoury Cajun rice.
Dirty rice gets its name, and its colour, from the meat and spices cooked into it. Here ground turkey and the trinity do the job, simmered with the rice in broth. Cajun-rubbed chicken breast seared on top makes it a full plate.
Ingredients
For 4 plates.
Dirty rice
- 8 oz 93% lean ground turkey
- 1 yellow onion, diced
- 2 celery stalks, diced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 1 teaspoon Cajun seasoning
- 1 cup long-grain white rice
- 1 3/4 cups low-sodium chicken broth
- 2 scallions, sliced
Cajun chicken
- 1 1/2 lb boneless skinless chicken breasts
- 2 teaspoons Cajun seasoning
- 1 tablespoon canola oil
- 2 tablespoons chopped fresh parsley
Method
Brown the turkey in a deep pan over medium-high heat for 5 minutes until 165°F. Add the onion, celery and pepper and cook 4 minutes, then the garlic and Cajun seasoning.
Stir in the rice and broth, bring to a boil, cover and cook on low 18 minutes.

Tips
- Cajun blends are salty, so taste before adding any extra salt.
- Slice the chicken across the grain for the most tender pieces.
