Sriracha, lime and a little honey make a glaze that's hot, sharp and sweet in one go. Thighs roast in twenty minutes and stay juicy for days, which makes these the easiest lunch boxes in the rotation. Pack the crunchy toppings and the yogurt drizzle separately.

Ingredients

For 4 bowls.

Chicken

  • 2 lb boneless skinless chicken thighs
  • 2 tablespoons sriracha
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 1 tablespoon low-sodium soy sauce
  • 2 cloves garlic, grated

Rice

  • 1 cup jasmine rice
  • 1 1/2 cups water

Bowl toppings

  • 1 cup frozen shelled edamame, thawed
  • 2 cups shredded red cabbage
  • 1 English cucumber, sliced
  • 1/4 cup chopped fresh cilantro
  • 1 lime, cut into wedges

Sriracha yogurt

  • 1/2 cup plain nonfat Greek yogurt
  • 1 teaspoon sriracha

Method

  1. Heat the oven to 425°F. Stir the sriracha, lime juice, honey, soy sauce and garlic together and toss with the chicken on a foil-lined sheet pan.

  2. Roast 18 to 20 minutes until the edges char and the chicken is 165°F. Rest 3 minutes and slice.

  3. Meanwhile, bring the rice and water to a boil, cover, turn the heat to low and cook 15 minutes.

  4. Slice the cucumber and cabbage, thaw the edamame and stir the yogurt with the sriracha.

  5. Divide the rice among 4 containers or bowls and top with the chicken, edamame, cabbage, cucumber and cilantro. Pack the drizzle and lime on the side.

Tips

  • Line the pan with foil; the honey glaze caramelises and sticks.
  • Squeeze the lime over right before eating for the brightest flavour.
