Turkey Taco Rice Skillet
One-pan taco turkey, rice, beans and melted cheese.
Everything you'd put in a taco, cooked into one skillet of rice so it packs neatly for the week. The rice simmers in broth and tomatoes, soaking up the taco spices. Cheese melts on at the end, and a squeeze of lime freshens it up.
Ingredients
For 4 bowls.
Skillet
- 1 1/2 lb 93% lean ground turkey
- 1 yellow onion, diced
- 1 red bell pepper, diced
- 1 tablespoon taco seasoning
- 1 cup long-grain white rice
- 2 cups low-sodium chicken broth
- 1 (14.5 oz) can diced tomatoes
- 1 (15 oz) can black beans, drained and rinsed
- 2 oz reduced-fat cheddar, shredded
To serve
- 1/4 cup plain nonfat Greek yogurt
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
Method
Brown the turkey with the onion and pepper in a large deep skillet over medium-high heat for 6 to 7 minutes until 165°F. Stir in the taco seasoning.
