Chicken and Dumplings
Creamy chicken stew under fluffy herb dumplings.
This is the pot you want on a cold night: tender chicken and soft vegetables in a lightly thickened broth, with buttermilk dumplings steamed right on top. The dumplings cook under the lid, so don't peek for twelve minutes. Lean breast meat keeps it hearty without heaviness.
Ingredients
For 4 bowls.
Stew
- 1 tablespoon unsalted butter
- 1 yellow onion, diced
- 2 carrots, sliced into coins
- 2 celery stalks, diced
- 2 tablespoons all-purpose flour
- 3 cups low-sodium chicken broth
- 1 1/2 cups water
- 1 teaspoon fresh thyme leaves
- 1 3/4 lb boneless skinless chicken breasts
- 1/2 cup 2% milk
- 1 cup frozen peas
Dumplings
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon kosher salt
- 1/2 cup low-fat buttermilk
- 1 tablespoon unsalted butter, melted
- 2 tablespoons chopped fresh chives
Method
Melt the butter in a wide pot over medium heat and cook the onion, carrots and celery for 5 minutes. Sprinkle in the flour and stir 1 minute.
Whisk in the broth and water, add the thyme and the whole chicken breasts, and simmer 15 minutes until the chicken reaches 165°F.
Meanwhile, whisk the flour, baking powder and salt, then stir in the buttermilk, melted butter and chives until just combined.
Lift out the chicken, shred it and return it with the milk and peas.
Drop the dough onto the simmering stew in 8 spoonfuls. Cover and cook 12 minutes without lifting the lid, until the dumplings are puffed and cooked through.
Tips
- Drop the dumplings onto the stew, not into the liquid, so they steam instead of turning gummy.
- Stir the dough just until it comes together; lumpy dough makes the lightest dumplings.
