Chicken Kathi Rolls
Spiced chicken and egg-washed wraps, street style.
Kathi rolls come from Kolkata's street stalls: flatbread with an egg cooked right onto it, rolled around charred spiced chicken, sharp onions and green chutney. Large flour tortillas make a quick, honest stand-in for paratha. The chutney is yogurt, cilantro and mint blended for a minute.
Ingredients
For 4 rolls.
Chicken
- 1 1/2 lb boneless skinless chicken breasts, cut into thin strips
- 1/2 cup plain nonfat Greek yogurt
- 1 teaspoon garam masala
- 1 teaspoon ground cumin
- 1 teaspoon sweet paprika
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon kosher salt
- 1 tablespoon canola oil
Green chutney
- 1 cup fresh cilantro, packed
- 1/4 cup chopped fresh mint
- 1/2 cup plain nonfat Greek yogurt
- 1 green chili
- 1 tablespoon fresh lemon juice
Rolls
- 4 large burrito-size flour tortillas
- 4 large eggs, beaten
- 1 small red onion, thinly sliced
- cooking spray
Method
Toss the chicken with the yogurt, spices and salt.
Blend the chutney ingredients until smooth. Slice and rinse the onion.

Tips
- Rinse the sliced onion under cold water; it keeps the bite and loses the harshness.
- Roll them tight in foil or paper to eat on the go, the way the stalls do.
