Chicken Vindaloo
Tangy, fiery, garlicky Goan-style chicken curry.
Vindaloo's signature is vinegar and lots of garlic, balanced with warm spices and real heat. A short marinade in the spiced vinegar flavours the chicken right through, and the long simmer melts the onions into the sauce. Make it a day ahead if you can; it only gets better.
Ingredients
For 4 bowls.
Spiced vinegar
- 1/4 cup apple cider vinegar
- 1 tablespoon sweet paprika
- 1/2 teaspoon cayenne pepper
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon ground cloves
- 1/2 teaspoon ground black pepper
- 6 cloves garlic, minced
- 1 tablespoon minced fresh ginger
- 1 teaspoon kosher salt
Curry
- 2 lb boneless skinless chicken thighs, cut into 1 1/2-inch pieces
- 1 tablespoon canola oil
- 2 yellow onions, finely chopped
- 2 tablespoons tomato paste
- 1 teaspoon light brown sugar, packed
- 1 cup water
- 2 tablespoons chopped fresh cilantro
Rice
- 1 cup basmati rice, rinsed
- 1 1/2 cups water
Method
Stir the marinade ingredients together, toss with the chicken, cover and refrigerate 15 minutes.
Meanwhile, heat the oil in a heavy pot over medium heat and cook the onions, stirring often, for 10 minutes until deep golden.

Tips
- Paprika gives colour without extra heat; the cayenne sets the fire, so adjust it to taste.
- Let the onions turn deep golden; they give the sauce its sweetness.
