Chicken Korma
Mild, creamy cashew curry with tender chicken.
Korma is the gentle one: warm spices, sweet onion and a silky sauce made from cashews and yogurt instead of cream. Blending the cashews with the cooked onion gives it body, and the yogurt goes in off the heat so it never splits. Serve it with basmati, or with garlic naan for the full order.
Ingredients
For 4 bowls.
Rice
- 1 cup basmati rice, rinsed
- 1 1/2 cups water
Korma
- 1/3 cup raw cashews
- 1 tablespoon ghee
- 1 large yellow onion, finely chopped
- 4 cloves garlic, minced
- 1 tablespoon minced fresh ginger
- 2 teaspoons garam masala
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon ground cardamom
- 1 teaspoon kosher salt
- 2 lb boneless skinless chicken breasts, cut into 1-inch pieces
- 1/2 cup water
- 1 cup plain 2% Greek yogurt
- 2 tablespoons chopped fresh cilantro
Method
Bring the rice and water to a boil, cover, turn the heat to low and cook 15 minutes. Leave it covered off the heat.
Cover the cashews with hot water. Melt the ghee in a large pan over medium heat and cook the onion 6 minutes until soft and golden. Add the garlic, ginger, spices and salt and stir 1 minute.
Scrape the onion mixture into a blender with the drained cashews and the 1/2 cup water and blend until very smooth.
Return the sauce to the pan, add the chicken and simmer, covered, for 8 to 10 minutes, stirring once, until the chicken reaches 165°F.
Take the pan off the heat for 1 minute, then stir in the yogurt until creamy. Scatter with cilantro and serve with the rice.
Tips
- Soak the cashews in hot water while the onion cooks; they blend smoother.
- Take the pan off the heat for a minute before stirring in the yogurt.
