Chicken Paprikash
Paprika-red chicken in a creamy sauce over noodles.
Paprikash is Hungary's great comfort dish, and it lives on a generous amount of sweet paprika bloomed in the onion fat. Greek yogurt takes the place of sour cream, stirred in off the heat so it stays silky. Egg noodles soak up the sauce.
Ingredients
For 4 bowls.
Paprikash
- 2 lb boneless skinless chicken thighs
- 1 tablespoon canola oil
- 2 yellow onions, thinly sliced
- 1 red bell pepper, sliced
- 2 tablespoons sweet paprika
- 1 tablespoon tomato paste
- 1 tablespoon all-purpose flour
- 1 cup low-sodium chicken broth
- 1 teaspoon kosher salt
- 3/4 cup plain 2% Greek yogurt
Noodles
- 6 oz egg noodles
- 2 tablespoons chopped fresh parsley
Method
Brown the chicken in the oil in a wide pan over medium-high heat, 3 minutes a side. Move to a plate.
Cook the onions and pepper in the pan for 6 minutes until soft. Off the heat, stir in the paprika, tomato paste and flour.

Tips
- Take the pan off the heat before adding the paprika so it doesn't scorch and turn bitter.
- Hungarian sweet paprika has the best flavour; add a pinch of hot for a kick.
