Crispy Rice Treats
Chewy, buttery marshmallow squares with a boost.
The classic bake-sale square is three ingredients and no oven. Stirring whey into the melted marshmallow keeps the same chewy, gooey texture while making two squares a real snack. Press the mixture gently so the squares stay light.
Ingredients
For 4 portions.
- 1 tablespoon unsalted butter
- 4 cups mini marshmallows
- 3 scoops unflavored whey protein isolate (about 1 cup)
- 2 tablespoons 2% milk
- 4 cups crispy rice cereal
- cooking spray
Method
Melt the butter in a large pot over low heat, add the marshmallows and stir until just melted.
Off the heat, whisk the whey with the milk into a paste and stir it into the marshmallow, then fold in the cereal.
Press gently into a sprayed 8-by-8-inch pan and leave 15 minutes to set. Cut into 8 squares.
Tips
- Melt the marshmallows over low heat; high heat makes the squares hard.
- Butter your spatula and hands so nothing sticks.
