Pork and apples are an old pairing for a reason: the fruit's sweetness and a splash of cider vinegar cut right through the richness of a well-browned chop. Everything happens in one skillet in under half an hour. Sweet potatoes cook in the microwave while you sear.

Ingredients

For 4 plates.

Sweet potatoes

  • 1 1/2 lb sweet potatoes, peeled and cubed
  • 1/4 teaspoon kosher salt

Pork chops

  • 4 boneless pork chops (6 oz each)
  • 1/2 teaspoon kosher salt
  • 1 tablespoon canola oil

Apples

  • 2 Honeycrisp apples, cored and sliced
  • 1 shallot, sliced
  • 1 teaspoon fresh thyme leaves
  • 1/2 cup low-sodium chicken broth
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon pure maple syrup
  • 1 teaspoon Dijon mustard
  • 1 teaspoon unsalted butter

Method

  1. Microwave the sweet potatoes with 2 tablespoons water in a covered bowl for 8 to 10 minutes until tender, then mash with the salt.

  2. Meanwhile, season the chops and sear them in the oil in a large skillet over medium-high heat, 4 to 5 minutes a side, until 145°F. Rest on a plate.

Tips

  • Pat the chops dry and leave them alone in the pan to get a deep crust.
  • Firm, tart-sweet apples hold their shape best.
