Unstuffed Cabbage Roll Skillet
Cabbage rolls' sweet-sour flavour, none of the rolling.
Stuffed cabbage takes an afternoon; this skillet takes thirty-five minutes. Beef, rice and chopped cabbage simmer in a sweet-and-sour tomato sauce with paprika and dill, exactly like the filling and the sauce of the original. A spoon of yogurt on top plays the sour cream.
Ingredients
For 4 bowls.
Skillet
- 1 1/2 lb 93% lean ground beef
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 2 teaspoons sweet paprika
- 6 cups chopped green cabbage
- 3/4 cup long-grain white rice
- 1 (14.5 oz) can crushed tomatoes
- 1 1/2 cups low-sodium beef broth
- 1 tablespoon apple cider vinegar
- 1 tablespoon light brown sugar, packed
- 1 teaspoon kosher salt
To serve
- 1/4 cup plain nonfat Greek yogurt
- 2 tablespoons chopped fresh dill
Method
Brown the beef and onion in a large deep skillet over medium-high heat, breaking it up, for 7 minutes until 160°F. Stir in the garlic and paprika.
Add the cabbage, rice, tomatoes, broth, vinegar, sugar and salt and bring to a boil.

Tips
- Chop the cabbage in bite-size pieces so it softens in the same time as the rice.
- Taste at the end and add a little more vinegar or sugar to balance.
