Berry Dutch Baby
A puffed, golden oven pancake with berries and yogurt.
A Dutch baby rises dramatically in a hot skillet and collapses into a custardy, crisp-edged pancake the moment it leaves the oven. A scoop of whey in the batter makes it more filling, and berries with Greek yogurt and a little maple go on top. Bring it to the table in the pan.
Ingredients
For 3 portions.
Batter
- 4 large eggs
- 3/4 cup 2% milk
- 2/3 cup all-purpose flour
- 1 scoop unflavored whey protein isolate (about 1/3 cup)
- 1 teaspoon vanilla extract
- 1/8 teaspoon kosher salt
- 1 tablespoon unsalted butter
Toppings
- 1 1/2 cups mixed berries
- 1 cup plain nonfat Greek yogurt
- 1 tablespoon pure maple syrup
- 1 tablespoon powdered sugar
Method
Put a 10-inch cast-iron or ovenproof skillet in the oven and heat to 425°F. Blend the eggs, milk, flour, whey, vanilla and salt until smooth and let it rest.
Add the butter to the hot skillet and swirl until melted, then pour in the batter.
