Carrot Cake Baked Oats
Spiced carrot cake oats with a tangy cream cheese top.
Baked oats taste like a soft, spiced cake but are made from breakfast staples: oats, eggs, yogurt, carrots and warm spices. A scoop of whey and a Neufchâtel-skyr frosting make it a properly filling breakfast. Bake it once and slice it for four mornings.
Ingredients
For 4 squares.
Baked oats
- 2 cups old-fashioned rolled oats
- 1 scoop unflavored whey protein isolate (about 1/3 cup)
- 1 teaspoon baking powder
- 2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon kosher salt
- 2 large eggs
- 1 cup plain nonfat Greek yogurt
- 1 cup skim milk
- 3 tablespoons pure maple syrup
- 1 cup grated carrots
- 1/4 cup raisins
- 1/4 cup chopped walnuts
- cooking spray
Frosting
- 2 oz Neufchâtel cheese, softened
- 1/2 cup plain skyr
- 1 teaspoon pure maple syrup
Method
Heat the oven to 350°F and spray an 8-by-8-inch dish. Whisk the dry ingredients, then the eggs, yogurt, milk and maple syrup. Fold in the carrots, raisins and walnuts and spread in the dish.
Bake 28 to 30 minutes until set in the centre (160°F) and golden at the edges. Cool 10 minutes.

Tips
- Grate the carrots finely so they melt into the oats.
- Let it cool 10 minutes before cutting so the squares hold together.
