Lemon Skyr Crêpes
Thin crêpes filled with sweet lemon skyr and berries.
Crêpes sound fussy, but the batter is a one-minute blend and they cook in under a minute each. The filling is thick Icelandic skyr sweetened with honey and bright with lemon zest, which tastes like cheesecake filling without the work. Fold them into quarters and add berries.
Ingredients
For 4 portions.
Crêpes
- 3 large eggs
- 1/2 cup liquid egg whites
- 1 cup 2% milk
- 3/4 cup all-purpose flour
- 1 scoop unflavored whey protein isolate (about 1/3 cup)
- 1/8 teaspoon kosher salt
- 1 teaspoon unsalted butter
Lemon skyr
- 1 1/2 cups plain skyr
- 2 tablespoons honey
- 2 teaspoons lemon zest
To serve
- 1 cup fresh blueberries
Method
Blend the eggs, whites, milk, flour, whey and salt until smooth. Rest 5 minutes.
