Croque Madame
Ham and Gruyère toastie, béchamel, a fried egg on top.
The croque madame is the Paris café sandwich at its most indulgent: ham and Gruyère toasted between bread, covered in béchamel and grilled, then crowned with a fried egg. Protein-enriched sandwich bread and a skim-milk béchamel keep it a breakfast rather than a nap. The broiler does the browning.
Ingredients
For 4 sandwiches.
Béchamel
- 1 tablespoon unsalted butter
- 1 1/2 tablespoons all-purpose flour
- 1 cup skim milk
- 1/8 teaspoon ground nutmeg
Sandwiches
- 8 slices protein-enriched sandwich bread (9 oz)
- 1 tablespoon Dijon mustard
- 4 oz thinly sliced deli ham
- 3 oz Gruyère, shredded
Eggs
- 4 large eggs
- cooking spray
Method
Melt the butter in a small pan, whisk in the flour for 1 minute, then whisk in the milk and simmer 3 minutes until thick. Add the nutmeg.
Heat the broiler. Spread half the bread with mustard, layer with ham and half the Gruyère and top with the rest of the bread.

Tips
- Whisk the béchamel constantly as the milk goes in so it stays smooth.
- Use a wide pan for the eggs so they don't run together.
