Freezer Turkey Feta Burgers
Herby turkey-feta patties built for the freezer.
Feta, spinach and oregano go right into the turkey, so these burgers stay juicy and taste of the Greek islands. Shape a double batch, freeze them flat between parchment, and cook straight from frozen on busy nights. A cucumber yogurt sauce goes on top.
Ingredients
For 4 burgers.
Patties
- 2 lb 93% lean ground turkey
- 3 oz feta, crumbled
- 1 cup chopped fresh spinach
- 1/4 small red onion, minced
- 1 teaspoon dried oregano
- 2 cloves garlic, minced
- 1 teaspoon olive oil
Cucumber yogurt
- 3/4 cup plain nonfat Greek yogurt
- 1/2 English cucumber, grated and squeezed
- 1 tablespoon chopped fresh dill
To build
- 4 hamburger buns
- 1 cup shredded romaine
Method
Mix the turkey, feta, spinach, onion, oregano and garlic with your hands until just combined. Shape into 4 thick patties and press a dimple into each.
Cook in the oil in a large skillet over medium heat, 5 minutes a side, until 165°F.

Tips
- Mix with a light hand; overworked turkey turns dense.
- Press a dimple in the centre of each patty so it cooks flat.
