Smoky Lentil and Chicken Sausage Stew
Hearty smoked-paprika lentils with sausage and kale.
Lentils cook in thirty minutes without soaking, which makes this stew a weeknight possibility and a meal-prep favourite. Smoked paprika and browned chicken sausage give it a campfire depth, diced chicken breast makes it hearty, and kale goes in at the end. It thickens overnight and freezes well.
Ingredients
For 4 bowls.
- 8 oz chicken sausage, sliced
- 1 lb boneless skinless chicken breasts, diced
- 1 teaspoon olive oil
- 1 yellow onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 2 teaspoons smoked paprika
- 1 teaspoon ground cumin
- 1 cup brown lentils, rinsed
- 1 (14.5 oz) can diced tomatoes
- 2 cups low-sodium chicken broth
- 2 cups water
- 4 cups chopped kale
- 1 tablespoon red wine vinegar
Method
Brown the sausage and chicken in the oil in a heavy pot over medium-high heat for 5 minutes. Add the onion, carrots and celery and cook 3 minutes.
Stir in the garlic, paprika and cumin for 30 seconds.
