Snack-Plate Lunch Boxes
The grown-up snack box: eggs, cheese, hummus, crunch.
Some days lunch is a snack plate, and that's fine when it's built right: eggs, cottage cheese, string cheese and a little turkey for protein, hummus and crunchy vegetables for dipping, fruit and almonds for something sweet and salty. The only cooking is boiling the eggs.
Ingredients
For 4 boxes.
Eggs
- 8 large eggs
Boxes
- 2 cups 2% cottage cheese
- 4 part-skim string cheese sticks (1 oz each)
- 4 oz sliced deli turkey
- 1/2 cup hummus
- 2 carrots, cut into sticks
- 1 English cucumber, sliced
- 2 apples, sliced
- 1/4 cup whole almonds
- 10 saltine crackers
Method
Lower the eggs into boiling water and cook 11 minutes, then cool in ice water and peel.
Meanwhile, cut the vegetables and apples.
The rest of the method is in Short Order Pro
1 more step, with cook mode and timers, in the app. Ingredients, nutrition and cost stay free on every dish, and 20 dishes include the full method for free.
Tips
- Slice apples last and toss them with a squeeze of lemon so they don't brown.
- Use any crunchy vegetables you like; snap peas and radishes are great.
