Southwest Chicken Pasta Bake
Smoky chicken, black beans and corn in cheesy pasta.
A pasta bake with taco-night flavours: chili powder and cumin, black beans, corn and tomatoes with green chiles, finished under melted Monterey Jack. It feeds six, freezes well, and the leftovers might be better than the first night.
Ingredients
For 6 portions.
Pasta
- 8 oz penne
Chicken and sauce
- 1 1/2 lb boneless skinless chicken breasts, cut into 1/2-inch pieces
- 1 teaspoon canola oil
- 1 yellow onion, diced
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon kosher salt
- 1 (14.5 oz) can diced tomatoes
- 2 green chilies, minced
- 1 (15 oz) can black beans, drained and rinsed
- 1 cup frozen corn
- 1/2 cup plain nonfat Greek yogurt
Topping
- 4 oz reduced-fat Monterey Jack, shredded
- 2 tablespoons chopped fresh cilantro
Method
Heat the oven to 375°F. Boil the penne for 9 minutes, 2 minutes short of done, and drain.
Meanwhile, brown the chicken and onion in the oil in a large ovenproof skillet for 6 minutes until the chicken is 165°F. Stir in the spices and salt, then the tomatoes, chilies, beans and corn, and simmer 3 minutes.

Tips
- Undercook the pasta by 2 minutes; it keeps cooking in the oven.
