Tuna Niçoise Prep Boxes
Tuna, jammy eggs, potatoes, beans, olives, vinaigrette.
Salade niçoise is a composed salad that happens to be perfect for prep: everything is good cold and nothing wilts. The potatoes and eggs cook in the same pot, the green beans blanch for two minutes, and a sharp mustard vinaigrette ties it together. White beans make each box properly filling.
Ingredients
For 4 boxes.
Potatoes, eggs and beans
- 1 lb baby red potatoes, halved
- 8 large eggs
- 8 oz green beans, trimmed
Boxes
- 4 (5 oz) cans tuna in water, drained
- 1 (15 oz) can cannellini beans, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1/4 cup black olives
Vinaigrette
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 2 teaspoons Dijon mustard
- 1/2 teaspoon kosher salt
Method
Cover the potatoes with cold water, bring to a boil and cook 15 minutes until tender.
After the potatoes have cooked 7 minutes, lower the eggs into the same pot for 8 minutes. Add the green beans for the last 2 minutes.
